A while back I was faced with the ever shrinking amount of space in my kitchen and was forced to make a decision: did I want to keep my microwave or did I want to get the Breville Smart Oven I’d been coveting for months… I did a little soul searching and decided that the Smart Oven was the way to go. I really wanted it.

So I’ve been adjusting to life without a microwave. Basically the only times I’ve really missed it has been for melting butter and making popcorn.

I’ve learned to melt butter in a ramekin in the baby oven and I recently acquired a basic air popper to fill the popcorn gap. (yay popcorn!) I actually prefer having the air popper to microwave popcorn for a variety of reasons not limited to the following: it’s a lot harder to burn the popcorn and I control exactly what goes on it. So I’ve been experimenting with popcorn seasonings and this is my current obsession: cheesy, peppery rosemary goodness. I really love pepper on popcorn. Mmmmm.

Popcorn Kernels
Olive Oil
Salt
Pepper
Rosemary
Parmesan Cheese

Start off by finely chopping up the rosemary. You want everything set before you pop the corn so the end product will still be hot and delicious.

Proceed by popping the kernels in whatever fashion you choose. This can be done via microwave, stove top or air popper. I’m sure creative minds could come up with other ways as well. I went with the air popper.

With the air popper you can catch the popped corn with a large bowl or a big paper bag. I like the paper bag because it’s easy to toss the popcorn with the toppings and then you can just toss the bag when you’ve finished. But that’s me.

Drizzle olive oil over the popcorn then sprinkle the rosemary, salt, pepper and cheese over the popcorn as well. Shake the whole shebang up to coat all the popcorn. You may need to repeat this process a few times to get everything coated and get the desired intensity of flavor. Be sure to taste along the way so you can get everything just as you like it!

 

Pour the popcorn into a large bowl, turn on a movie and munch away.
