Week 11 of the Very Veggie Challenge and we’ve got Kale Chips! I keep seeing kale chips all over the internet and hearing how good they are from friends, so I finally got my act together and gave them a try. The result was surprisingly tasty. The kale chips have a very satisfying crunch and with the  olive oil and salt are actually a pretty good substitute for popcorn. I could totally see sneaking a bag of kale chips into a movie theater and being totally okay with skipping the concession stand.

I went the basic route with my kale chips and stuck with olive oil and salt. However, I can see mixing it up with other seasonings. I could see garlic salt, garam masala, curry and a variety of other spices being super tasty…

Ingredients:

1 bunch of Kale
1 – 2 Tbsp Olive Oil
Salt or other seasonings

Preheat the oven to 250º F.

Wash and dry the kale very well. Cut the leaves off of the tough stem and cut or rip the kale into pieces approximately 1 – 1/1-2 inches long. To some extent, this will happen naturally with the shape of the kale leaves.

Toss the kale with the olive oil in a large bowl until the leaves are lightly coated in olive oil. This should be a very light coat, so start with a little olive oil and add as needed. Sprinkle salt (and other seasonings, if using) over the kale and toss to distribute evenly.

Spread the kale evenly over a baking sheet lined with parchment paper. At this stage, it’s okay with the leaves are touching or overlapping; they will shrink down during the cooking process.

Cook the kale chips in the oven for approximately 35 – 45 minutes, flipping the kale over and redistributing the kale around the baking sheet about every 10 minutes. For a long time it will look like nothing is happening or the kale will never crisp up. Don’t fear, the crisping happens pretty quickly towards the end, which is why you need to keep a close eye on it as the baking time draws to a close.

When the kale has reached the desired level of crunchiness, remove the baking sheet. Let the kale cool for a moment and then transfer it to a wire rack to finish cooling off.

 Then put on a movie and curl up with your bowl of yummy kale chips for tasty, salty munching.
