 It’s December! I love this month! It’s a month of happy music, cozy fires and red coffee cups at Starbucks. And it’s the perfect time for some hot cocoa. There’s nothing like curling up on the sofa with a big fuzzy blanket, lighting some candles and sipping on a big tasty mug of hot cocoa, all draped in whipped cream and and marshmallows. All the better if you have a guilty indulgence of a book to dive into or a cheesy Christmas movie on the television.

When I decide to have hot chocolate at home, it’s usually a bit of an affair that involves melting chocolate and whisking up a rich concoction over the stove…but sometimes I’m just not feeling up to it. Sometimes I wish I could just dump a packet of prepackaged mix in a cup and be done with it. However, store-bought mixes are often expensive or taste thin and watery — not what I’m looking for in a hot cocoa. So I made my own mix.

It’s great to keep on hand for those lazy hot cocoa cravings and also makes a terrific gift. Just package up several servings of the mix and put together with a great mug, a spoon and maybe some marshmallows or a candy cane and BAM — an adorable, personalized gift.

Lastly, this mix works well with either milk or water, which is exciting for when you are feeling too sleepy to even pop a mug of milk in the microwave or for folks like me who don’t have a microwave.

Ingredients:

2 Vanilla Beans
2 C Powdered Sugar
1 1/2 C Dutch Processed Cocoa, unsweetened
2 1/2 C Powdered Milk, nonfat
1/2 C Powdered Creamer
3 tsp Cornstarch
1 tsp Salt
4 oz Bittersweet Chocolate, finely chopped
Optional:
1 tsp ground Cinnamon
1 tsp ground Cardamom
1 tsp ground Ginger
1/2 tsp freshly ground Nutmeg

Instructions:

Slice the vanilla bean into approximately 1″ pieces and add to a food processor along with the powdered sugar. Process the vanilla beans and sugar until the vanilla beans have been incorporated into the sugar.

Sift the vanilla beans and sugar into a large bowl, discarding any remaining large pieces of vanilla.

Whisk the cocoa powder, powdered milk, creamer, cornstarch, salt and chocolate into the sugar. If you want the cocoa mix to be spiced, whisk in the cinnamon, cardamom, ginger and nutmeg as well.

Transfer the cocoa mix to an airtight container and store until ready to use.

When it’s time for a cup of cocoa, you want to use 1/4 C of mix for every cup of hot water or milk. Spoon the mix into a cup and pour a little of the water or milk into the mix. Stir the liquid and mix together until smooth and then pour in the rest of the liquid. Top with some whipped cream, marshmallows and a dusting of cocoa powder or cinnamon for a real treat!
