It has come to my attention that I bake a lot. Seriously, I’ve been put on restriction at work as to how often I’m allowed to bring baked goods in to work. So I’ve resolved to try and do more cooking (as opposed to baking). In particular, I’m making an effort to cook more vegetables and other bits of healthy matter. As part of my new initiative, I decided to cook up some cauliflower. Mmmmmm. Roasted cauliflower.

ingredients

1 head cauliflower
1 – 2 tbsp olive oil
1 tsp curry powder*
1 tsp garam masala*
1/2 tsp turmuric*
salt, to taste
*plus more as needed

Preheat the oven to 475 degrees.

Chop the cauliflower head into nice small florets. Try to make them as consistent in size as you can so everything cooks evenly…

Toss the cauliflower in a big ziplock baggie along with the olive oil, spices and salt and shake it up so the cauliflower gets coated with all the good stuff.

Spread the spiced cauliflower out in a baking pan and cover with aluminum foil. Cook, covered, for about 25 minutes, or until the cauliflower has softened and has become slightly translucent.

Remove the foil and continue to cook for another 25 minutes or so, until the cauliflower has started to brown. Take the cauliflower out of the oven and taste. Re-season with the spices, if needed. Serve hot and enjoy. (so delicious)
