As I mentioned earlier this week, I had a bit of a clean out the kitchen kind of weekend. While digging around in the fridge, I discovered that I had a jar of chocolate peanut butter called “Dark Chocolate Dreams” by Peanut Butter & Co just chilling in there. It seemed to me that the proper use for such an item would be cookies. And so there were cookies. A foray into the pantry revealed that I had a box with just a little bit of cocoa powder left and four open bags of various kinds of chocolate chips. Thus the chocolate multichip cookies were born.

They ended up being chocolatey and rich with just a hint of peanut butter and salt, but not too sweet. The texture is crisp on the outside and a little like a brownie on the inside. I’m loving them, as well as the fridge and pantry space left in their wake.

Ingredients:

3 1/2 C Flour
2 tsp Cinnamon
1 tsp Baking Soda
1 tsp salt
3 Tbsp cocoa powder
1 C Butter, unsalted
1 C Chocolate peanut butter
1 C Sugar
1 C Brown Sugar
2 Eggs
2 tsp Vanilla
approximately 1 1/2 C assorted  Chocolate Chips (white, bittersweet, semisweet, milk)

Preheat the oven to 350º F and line baking sheets with parchment paper.

Cream together the butter, white & brown sugars and the chocolate peanut butter.

Mix in the eggs and vanilla.

Whisk together the flour, salt, cinnamon, baking soda and cocoa powder.

Mix the dry mix into the wet in 3 batches. The batter will be very thick. Stir in the chocolate chips.

Roll the dough into balls and place on the cookie sheets. Flatten the dough balls slightly so you have a thick disk. Bake for approximately 18 – 22 minutes for large cookies and 15 – 18 minutes for smaller cookies. Rotate or switch trays half way through the baking time.

 

Once the cookies have finished baking, remove them to a wire rack to cool.
They are fantastic with a big glass of milk.
