Publix has excellent buttermilk. Seriously, I don’t remember the name of it, but it comes in a small plastic bottle and has a green cap and label. It’s miles better than what’s available in most large stores. I don’t shop at publix a lot, but when I do, I always make sure to grab a bottle of this buttermilk.

Well, this ends in my having to use the buttermilk for something.  I had a bottle sitting in my fridge for a while and, while I froze half of it in ice cube trays to have for later, I also wanted to make something. So did what I usually do when I need inspiration for a particular product: I googled “buttermilk” and browsed through the results. I ended up adapting a recipe I found on the blog called “Keep your home cooking.” It ended up being a sweet, tender, fluffy little bar with a nice tart bite from the dried cherries. Also, it’s super easy to throw together!

Ingredients

2 C Flour
3/4 C White Sugar
1/2 C Brown Sugar
1/2 C Butter, unsalted
1 tsp Salt (omit or reduce if using salted butter)
1 1/2 tsp Cinnamon
1 tsp Baking Soda
1/4 tsp Nutmeg
1 Egg
1 C Buttermilk
1 C Dried Cherries

Instructions

Preheat the oven to 350º F. Line a 9×13 baking pan with parchment paper.

Combine the flour, sugars, salt and butter in a bowl and cut the butter in with a pastry cutter or rub between your fingers until you have a sandy texture.

Take 1 1/2 C of the flour mixture and pat it down into the baking pan to form a crust.

Set aside another 1/2 C of the flour for the crumble.

In the bowl with the remaining flour, add the baking soda, buttermilk, egg,
nutmeg and 1 tsp of cinnamon.

Whisk together and then stir in the dried cherries. Pour the batter over the crust.

Stir the last 1/2 tsp cinnamon into the reserved 1/2 C of flour and use your fingers to squeeze the mixture into more of a crumble. Sprinkle it over the batter.

Bake in the oven for 25 – 30 minutes, until the middle is set and the top lightly browned.

Let the dish cool and then slice into squares.
